will you accelerate slower once you hit higher speeds? like on the highway I know you lose gas mileage but Im more concerned about speed

like all cars, drag is greater than thrust. But, compared to stock gears, you will keep pulling.

at higher speeds you will GAIN acceleration more then lose it. Your in a higher RPM range at the same MPH, so your starting closer to your max HP in your power band. The only thing gears cut down is top end and you really "shouldnt" notice that

the more accell you have from the dig and the less accell you have from a roll

5Th gear will feel like a real gear, I love when I am doing 70 and want to pass someone,,,, just stomp on the gas and she goes.... 4.10s what a difference

What he just said. My fifth gear was a dog even with 3.55's, because Ford used a Tremec 3650 with a OD ratio of 0.62 instead of the the 0.68 used in '03 GT models. Now all is good....

With the 4.30's in my 02 GT, 5th gear felt like 4,500rpms in 4th gear felt like in my buddies stock 04 GT (the power that is...)

You won't need to down shift anymore to pass anyone, you can just ease into the gas and she will take off...
