Help! running to hot
It's not odd at all. The symptoms fit with a cooling system that can't keep up with temperature demands. Larger radiator is an immediate fix, assuming the water pump fin's are still intact.
This is not to say that the coolant ports throughout the engine aren't clogged, because that would produce the same problem you're experiencing.
On a side note, 160 is entirely too low for an EFI system.

With a stock tune, you want 195 for optimum balance of fuel mileage/parts weardown/HP.
Though, you have a pretty wild engine. If it was my car, I'd have a 180 in there, just to lean on the side of caution. A 180 thermostat will keep the engine right about 192-195, which is perfect for HiPo EFI.
One thought popped into my head while typing this, and I'm not sure why I didn't pick up on it before. You have a 160 t-stat and electric fan. At that temperature, the fan won't come on until the system is already falling behind, compounding your issue. Do yourself a favor and get rid of the mail order tune.
