seems like my car runs cold, temp never really moves much. what is a good thermostat degree to install?

you mean temp never moves off cold or it comes up and stabilises?
If it never moves off cold - get your guage checked. (i'd probably do that anyway)

The thermo should be around 180*

it comes up, but very little. just above cold.

+1 on the 180 thermo and getting your gauge checked for accuracy. Most of us with a similar set up tend to run a little warm when not moving.
