Be carefull about de-greasers as they can discolor the aluminum parts of the engine.(cause them to turn white)
A known safe and effective cleaner is S-100.It's sold at motorcycle shops and is completely safe for aluminum.I use it to clean my HD's and it works quickly and won't discolor or dull the shiny aluminum.It's kinda expensive but it works.

For really bad degreasing jobs you might want to start with kerosene.It'll loosen up the grime but if you leave it on too long it'll also loosen up paint.
For light cleaning of engines and parts,a strong dish soap can do the job.Watch the aluminum though,dish soap is usually alkaline and can be hard on aluminum.

In terms of stuff readilly available I've had the best luck with Simple Green. Like mentioned anything corrosive will cause reactions with the metals in the engine bay turning it white.
