Default Exhaust question

I got a 351 in a Fox body with true dual exhaust. It has 2 cats on it upstream of the mufflers. I wanna remove the cats as I don’t have to do emissions testing anymore and they seem like, by looking inside, they’re pretty restrictive. Also this car is really quiet, so if I remove the cats is it gonna have a little more sound from the exhaust? I don’t want an obnoxious sound, but a little bit at idle is ok. Also IIRC there is a crossover pipe in the section where the cats are. Should I keep the crossover, even if it’s moved upstream a bit? Thanks! FEF
