I've got 4.10s in a manual. I don't drive on the highway THAT often, so I've actually noticed an increase in my gas mileage. It's a huge difference over stock, gears REALLY make a big difference, and is by far the best bang for the buck for our cars. I only got 4.10s because they came in the rear end that I found, but after having them, I couldn't go with anything lower!

Well, to be honest, won't be a lot of difference between the two. Maybe 1 mpg difference. The key is, which one is going to put you at that optimal fuel consumption point the best for both hwy and city driving.

Since you're an auto, it's true, 4.10's or bust. The 3.73's are great for manuals, since you already have an infinite level of control on shift points, but in an auto, you wouldn't notice much. The 4.10's will have you burning out and launching quick, 2 things every Stang should do.
Unless you commute via highway daily, the MPG difference won't be drastic, with a max decrease of 5 MPG (just throwing that number out to be safe). Most likely, you will see a drop of less than 2 MPG, and personally, I saw a drop of less than 1 when I put the 3.73's on my manual.
