if you're so much about gas mileage, get a Prius.. you're looking at the wrong car with a Mustang.
if you want a great looking car, get the Mustang.
if you a super fun car, get the GT.

I'm not going to get into wether you should make a shelby replica or not, as it's your car do what you would like. However i would like to just make a suggestion, if you do wish to make a shelby clone, that no shelby GT 500 comes with a automatic to my knowledge, they are all stick. So if you would like a more accurate replica on the inside, get a stick. Again that's up to you to decide.
Anyways onto the subject. I owned a 2.7L V6 hyundai sonata before this, and now i own a 08 GT, and i must say i was suprised on the gas mileage for a V8, when i can actually control myself and drive conservatily, which means shifting at 2500ish-2700ish, that i would say i get around the same amount of gas mileage.
98% of my driving is city, and being a stick shift i wouldn't have it any other way. Too much fun. But between my old car and my new GT, they get around the same gas mileage. I just got the car, so right now i have been WOT quite a bit on it and i think my dash rates me at like 18.2 MPG or so. But i can tell by how much the gas needle moves compared to my old car, and there about the same. I would say it has to do with the GT has a pretty effiecent engine if drivin correctly.
Also as others have said, if you do get a GT, and you do want to just mess around and go fast, you defintly have the power to do so, where is with the V6 (never drivin one, but heard for being a V6 there quick), you won't have as much power.
GL with your build.
Edit: Another thing to consider as well, i believe a stick will also get you better gas mileage then a automatic will. I believe that's correct, if anyone could confirm this, i'm sure it would help him out some. Also something else to consider if you want more power, sticks are shown to have more HP out the factory then a automatic as well. Not sure if your interested in more power or not, but just something else to consider.

Yes a manuel trans will get you better gas mileage.
No you should not make a Shelby clone from a V6 for prides sake!!! Yes,99% of the population would not be able to tell, but 1% would point and laugh. I'm not trying to bash you but sometimesI just gotta call'em straight. If you want good gas mileage buy a hyundai or ahybrid. If you want a Shelby Clone at least buy a V8 and do it. But you might as well just buy a real one because a clone that can pass at a glance is going to cost an additional4-$5K and one that can pass at a long look will cost you way more. Also everyone and their momma will try and race you and in a V6 amoderately moddedeclipse willOWN you.
BTW, I get 14.5mpg shake n bake!!!

i have had both a v6 and v8 though its a cobra now but i would never go bak to the v6 gas really isnt all the mcuh of a difference if u do get a gt and find that it is diff check the air filter or something like that and u can do minor mods like a cai intake or something like that which will yes give u more hp but also help wit gas...i say got wit the v8 if u cant get it then its no prob either u gota go wit the money in this day and age but i doubt that u would regret a gt...good luck wit ur search man
Don't get a poser car. The stock v8 isn't enough for racing either. Do whats in your budget. A used gt is generally cheaper then a new 6. Insurance rates should vary a lot between the gt or 6. Mileage varies on how you drive, but expect more than 1 mpg more on the 6.
