Well this kinda explains the whole pot thing.. j/k..
250 is a tad warm, 300 is way too warm. Things start warping with that much heat, like heads. Get a mechanical guage and install it. They are cheap and it will show you how hot its really getting.
If it really is 250, then you need to adress why its running that hot. List of suspects is thermostat, radiator, hoses, blockages and cracks, since you put on another water pump that might not be it. If its a late model pump then it would be turning the wrong way and that would be bad too. Do you have any idea what year your engine is?

To be honest, not really.. The shop fiddled with several pumps and they found one that fit the holes and had the outlet on the correct side, so I'm assuming that is the right one. I know it's not a thermostat as I had that replaced as well today. I really don't know cars well enough to know what it is unfortunatly.

My engine has the caps ( i forget what they are called but the caps on the outside of the block that keep the H2O inside) that melt in the center if the temp gets above 280 or something like that. Its a tattle-tail device that lets the builder know whether or not to honor the warranty.
Congrats on getting the right pump.

Well, fortunatly, I don't have a warrenty, so I don't need to worry about it. I REALLY hope it's just reading wrong though. I have no way to tell save the engine blowing up...

I will never call any engine other than the 351 a Windsor. I don't know how that got started but I think it is crap. I know they are in the same engine family but that is all. The 221, 260, 289 and 302 are all basically the same engine and they came out well before the 351. The term Windsor didn't even exist until the 351 came out. So in 1967 did they call a 289 a Windsor? NO! So it ain't a freaking Windsor! They only reason the term existed in the first place was to differentiate between the Cleveland and the Windsor 351s. As far as I’m concerned the 221/260/289/302 are a small blocks, not a Windsors. A Windsor is the only thing that is a Windsor.

i swear this forum has the most people with lack of car/mustang knowledge ive ever been on. if you do some searching the windsor family started and was named after the windsor engine plant. they were made to replace the Y block. and yes it includes the 221-351.
so i guess the 427 isnt really a FE engine since it came after the the first generation FE engines
