Default 357W's running hot

Alright, so heres the story. I have an 84 357W, It's got milled trick flow stage 1 heads, I'm using a New Stock replacement water pump from an 86, 160 Stat, Griffin 2 core aluminum (1 inch cores), Obviously running a serpentine setup so my pumps a reverse flow, I'm using Felpro head gaskets out of a summit engine rebuild kit, I've eliminated my heater core. So I plugged the top hard line on the pump, and connected the bottom to the thermostat housing. The car heats up to the 210 area after only afew mintues. I shut it down after that, becasue I dont want to damage my heads. I tore it down today, and the head gaskets were installed correctly, both gaskets labeled front were facing the front. So I'm @ a loss here, I've gone through everything. And yes, I know that I should be running a 180 stat, but I swapped that to a 160 just for the hell of it.

I am also running an alum. rad., i also eleminated heater core lines and have them plugged. I am running no thermostat. but will be putting one on. I also have a serpentine set-up. I have a 70's non roller. The only diff. in our cooling systems is i have a high flow summit water pump and dual electric fans. It takes forever for my engine to warm up, probably due to lack of stat. In middle ga the heat has been extreme and i run cool. I have a switch inside to control fans and have to cut them off sometimes because engine gets to cool. I think with electric fan you should be ok.
