Use an infrared thermometer on the thermostat housing; that's fairly accurate. A cheap and easy way to check your in dash gauge.

If you find the dash gauge is pretty accurate, then start looking for other reasons for it to be hot. Running lean on the AFR can do that. Too much timing can do that, too.
